I'm sure I posted something this fall about discovering Dylan has a wheat allergy. Since cutting wheat out of his diet his skin has improved but at times he still gets flare ups. I've learned that wheat is used as an additive and thickener in so much of what we eat and even the smallest trace irritates him. This is something that he could likely outgrow if we exclude from his diet so I'm working really hard to cut it out in every possible way. This means I make almost everything from scratch - which can be overwhelming but I've also discovered some great recipes that are probably way healthier than all of the pre-made, boxed, and canned items we used to buy. Using this page as a way to store recipes and hopefully receive ideas.
PINEAPPLE MUFFINS
- 1 3/4c oat flour (I actually subbed out 1/4c oat flour and used quinoa flour for extra protein - but it does alter the flavor a little bit).
- 1/2 c butter
- 1/4 tsp salt
- 1 c brown sugar
- 1 egg
- 1 small can crushed pineapple (it didn't say to drain but I did drain some of the juice)
- 1 tsp baking soda
- Didn't call for it - but I added one cap full of vanilla extract
- Cream butter and sugar; add egg and beat
- Dissolve baking soda in pineapple and add to butter mix alternating with flour and salt
- Fill paper muffin cups 1/2 full and bake on 350 - 375 for 20-25 minutes
- I left most of the muffins plain but did make a tiny batch of cream cheese frosting for a few of them as an after dinner "treat".
